I always remember myself, since I was a little girl, sneaking in the kitchen to "help" my grandmother to make her famous Thessalian pies. She told me in order to open the phyllo dough nicely, you have to let it rest after kneading. I was looking at the dough impatiently, waiting for the moment that my grandmother will take the perfectly round, little ball, flattening it into a disk and dust it with flour, before she took the yard long, half an inch roller pin. As she was throwing the flour in the air, the sun rays, coming from the kitchen window, made it look like fairy dust and I knew that the magic was about to happen!
I loved when she was telling me stories about my great grandmother, how she came from Constantinople and how she told her about all the amazing spices and herbs. How she taught her not only about their aromas and the flavors that they give to each food, but also the health benefits that we are getting from all those "gems" that nature is giving us She would make me close my eyes and smell one by one, all the spices and herbs so I could tell which ones go well together and how to understand them. I lost most of my hearing in very young age. She called it a gift from God, because this way the sense of smell and taste was stronger and that will make me the best yet in the family, but I have to remember, the most important ingredient that I have to add every time I cook, is love. When I asked her if she will be there to guide me, she promised me that she wouldn't be the only one guiding me, but all the women in the family before her. And now, after years of friends telling me that I have to open my own restaurant, here I am, thanks to my husband Peter, with my ancestors' guidance and a lot of love, preparing your meals.
